I've never been a big fan of eggs, but I'm a huge fan of anything that can be made directly in a cup that I can take around with me. And this recipe fit the bill.

Egg in a cup is hardly anything to write home about, but it tastes fine and is fairly easy to make. Of course, having to peel a soft boiled egg is easier said than done. The one minute preparation time listed in the recipe also seems a little unfair- water has to boil, butter has to soften, and, of course, the egg has to be peeled

Overall, however, the recipe is one that I would make again if spending a night on my own. It isn't very filling, though, so doubling it may be in order.

Egg in a Cup

Prep time: ≈1 minutes

Cook time: ≈3 minutes

INGREDIENTS

2 eggs

15 saltine crackers

1 tablespoon butter, softened

salt and pepper to taste

DIRECTIONS

Bring a pot of water to a boil. Add eggs, and cook for 3 minutes. The yolks need to be runny. While the eggs cook, crush the crackers into two coffee mugs with the butter. When the eggs are done, remove from the water, and peel. Place one soft-boiled egg into each cup. Mix into the crackers, and season with salt and pepper.

EVALUATION

Taste: 3.7- I wouldn't want to eat it all day, every day, but as an occasional meal it tastes pretty good. It probably tastes even better to people who like eggs and saltines.

Ease of Preparation (5=easy, 1=difficult): 4- Everything is incredibly simple, but peeling an egg is an annoying and time-consuming task.

Practicality: 5- It's literally just an egg and some crackers. Pretty common to have around, cheap and simple to buy.

Overall score: 4- The simplicity of the meal- it could probably be whipped up on a whim for nights when going out is too much of a chore- makes up for any doubts about the taste. Well worth trying.
