Killeen, Texas Secret Recipe: 5 Minute Corned Beef And Cabbage – Happy St. Patrick’s Day
Happy St. Patrick's Day! Woke up in Killeen-Temple, Texas this morning like every other at 4:30, got ready for work, and walked into the studio at 5. Everything about this morning was the same as it ever was on an average weekday.
The only difference is instead of thumbing through my phone for 5 minutes before leaving the house, I decided to make enough food to feed a family of 5 the whole weekend. Check out this simple 5 minute recipe for corned beef and cabbage. Yes, 5 minute recipe.
What will you need?
If you want to have a vegetarian option, you will need 2 crock pots. It's honestly better with 2 anyway because you can make a ton of extra cabbage and red potatoes. Also, if you get a large enough brisket, you won't have much room in the left in the main crockpot. Purchased all of the necessary ingredients for about $25 at Aldi.
Ingredients:
5lbs Red Potatoes; 2 Pints Pilsner Beer; Corned Beef Brisket (Go LARGE and flat cut); 1 Large Yellow Onion, 2 Large Cabbage Heads. That's it, 5 ingredients and 5 minutes.
Time Check - 4:49a: 1st, wash your hands.
OK, start the clock. The tortoise may win the race, but this is a tag team effort, and the hare is bringing all speed from the jump.
Wash and places red potatoes in the bottom of your crockpot(s).
Some people cut them up, but I have a big mouth.
Halve the cabbage, then cut each half into 3 wedges.
Was probably 30 years old before I was grown up enough to try cabbage and realize I like it. Cole slaw is still trash though.
Pro Tip: Cut the wedges before chopping off the stem.

Open corned beef, and included seasoning.
Honestly, other than having to touch the meat briefly, there's almost zero mess.
Rub in 1/2 on each side.
This is Texas, shouldn't have to explain the importance of meat rubbing.
Place brisket on top of potatoes fat side down (Very important), WASH YOUR HANDS!, place wedges on brisket, add 1 pint beer, and cover.
Make sure you pour the beer along the sides, so not to wash away the rub. If you rubbed it properly, it shouldn't be too much of an issue. Now cover the crock pot.
Set on low.
If you have a newer/digital crock pot, set it for 12 hours on low. You want at least 6, but low and slow for as long as you can is best. Whatever time you pick, 1/2 way through toss in half of the yellow onion into each crock pot, or one onion halved into the single crockpot.
It won't feel anything close to 12 hours with a full day of work and errands crammed in the middle.
Clean up your mess!
BTW, the mess was a few wrappers, 2 cans of beer to recycle, and a couple leaves of the peeled back cabbage.
