Tacos are serious business here in the Lone Star State, and these places in Killeen, Texas know how to pack a shell.
Taco Tuesday Makes My Week
At this point in my life, I feel it's safe to say that Taco Tuesday has become a global celebration, and it's our duty to make sure we eat the very best every Tuesday. I'm not trying to sound dramatic, but I don't even like to bother eating anything else on a Taco Tuesday, and if my menu is changed, the whole week will be off.

I want my tacos and I want them on Tuesday religiously. For most Texans, we grew up with tacos. They're required eating along with barbecue and sweet tea.
Everybody has their own little twist on what makes a good taco, but I have three taco establishments in mind that always satisfy the taste buds of Central Texans. I would be lying if I didn’t say that they were the talk of the town. Let’s go through my three taco establishments that you must have on Taco Tuesdays. Keep in mind that these are not ranked by any means They are just all delicious.
A NEW TWIST ON AN OLD TRADITION!
Fallon Rufus, owner of Bar Beauty On the Go, definitely changed the game when she got into making tacos. Fallon does not just do traditional tacos like carne asada just regular chicken tacos. When you order from Fallon, you can get not only the Birria Tacos or the classic, but she also has an amazing three meat etouffee taco that will blow your mind!
I’m not exaggerating when I say if you order from Fallon you’re more than likely not going to be able to make it out of the car to the table. You are going to devour that food!
YUMMY, YUMMY IN MY TUMMY!
Another taco establishment that makes your taste buds go crazy is El Callejero. If you’re not familiar with El Callerjero, let me get you really familiar with them. In my opinion, this is where you go to get your birria burrito, birria taco, or their infamous birria ramen.
Anything birria at El Callerjero executes. I remember the first time I tried this particular food truck, I knew that this was not going to turn out very well for me because now I have an addiction and a weight gain issue dealing with this establishment.
All jokes aside, the customer service is absolutely amazing and the food is undeniably delicious!
Las Pilas Tacos is also a food truck with delicious flavors.
If you want to talk about authentic Mexican food, this is where you go. The ingredients seem so simple when it comes to making a perfect taco in my eyes. All you need is a corn tortilla, carne asada, cilantro, onion, and green salsa. You think to yourself that combination is so easy that a baby can do it, but I’ve seen it literally ruined by plenty of people.
Las Pilas by far makes the best carne asada taco you ever had. They sit right in front of Twice as Funny Comedy Lounge, and this establishment will not disappoint!
